The loveliest delicacy of the fennel plant is the pollen.  Harvested at the most potent time of its flowering these fennel blossoms are heavily dusted with pollen to flavour anything that could use a little sunshine or a little liquorice scent.
 
We love all parts of this plant.  We grow it for the beautiful and delicious foliage, the seeds and the flowers.  We also let it self seed abundantly in the garden to provide a habitat for the black swallowtail's caterpillars.
